By Geòrgia Iordache – Your Culinary Storyteller
My dear food lover,
Close your eyes. Imagine the scent of saffron-infused rice crackling over woodfire, the tang of freshly-picked oranges, and the creamy bite of a cheese made by monks in medieval monasteries. This is Castellón’s soul—served on a plate.
As your local guide (and self-confessed food obsessive), let me take you beyond tourist menus to where grandmothers stir giant paella pans, fishermen haul ruby-red prawns at dawn, and almond orchards gift us turrón so divine, you’ll weep. Here are 10 flavors that define my home:
1. The Paella That Started It All
📍 Where to try: Beachfront chiringuitos (Puerto del Grao de Castellón, Benicàssim)
🍽️ Order: Arròs a banda (fish paella) or arròs negre (squid ink).
💬 My memory: «On Sundays at my in laws, we always cook paella and MIL saves the rice crust (socarrat) for me». What can I say? They love me.
2. Morella’s Legendary Cheese
🧀 Flaó de Morella (honey-kissed goat cheese tart) and cheese from Morella
📍 Where: Pastisseria Monfort (Morella)
💬 «One bite transports me to childhood summers—when the shepherd would let me pet his goats.»
3. The Orange That Tastes Like Sunshine
🍊 Navelina oranges from La Plana, although we have many types of oranges. A friend of mine just developed a chocolate color orange skin. It tastes good, but the looks are even better. You can also look for «naranja sanguina» the red blood orange. Walking around the old city center you will see people selling oranges in front of their houses. Remember, the orange season is from mid-late october to may.
💡 Try: Fresh-squeezed juice at Mercado Central de Castellón
4. Seafood That Whispers ‘Mediterranean’
🦐 Gambas rojas de Vinaròs (sweet red prawns)
🔥 Best served: Grilled with just salt and olive oil at Casa Jaime (Peñíscola).
5-10. Quickfire Flavors
5️⃣ Olleta de la Plana (hearty bean & pork stew)
6️⃣ Coca de tomate (tomato flatbread) – «My abuela’s secret? Toasted garlic!»
7️⃣ Calamars farcits (stuffed squid) in Benicarló
8️⃣ Herbero (anise liquor) – «Sipped at village fiestas under starry skies.»
9️⃣ Tortas de Alcora (crispy anise cookies)
🔟 Rosquilletas – «The crunch that accompanies every beach day!»
🍽️ A Local’s Dining Tips
How? Say «¿Qué me recomienda?» («What do you recommend?»)—chefs love sharing pride.
When? Spring for artichokes, autumn for wild mushrooms.
Where? Avoid seafront tourist traps—real gems hide inland (ask me for villages!).
💌 An Invitation from your guide, Geòrgia
«Food here isn’t just eaten—it’s felt. When you taste that first bite of smoky paella or flaky empanada, you’re tasting centuries of love. Send me an email if you want my handwritten list of family-run bodegas!»
